Aunt Susie's Pumpkin Pie

1 large can pumpkin

4 eggs

3 TBS flour

5 cups whole milk

2 ½ cups sugar

1 tsp. salt

2 tsp. cinnamon

Directions:  Mix all with mixer.  Pour into 2 deep dish pie crusts.  Bake at 425 

degrees for 10 minutes, then 375 degrees for 50-60 minutes.

Comment:  If you want to make ahead, I have made the filling the day before and 

then poured into the crust to bake the following day and it worked great.  This is 

Kory's  favorite Pumpkin pie.

Strawberry Pie

1 qt. strawberries

1 cup sugar

Pinch salt

2 level T. cornstarch

1 cup boiling water

2 T. strawberry gelatin

2 tsp. butter

1 baked pie crust

Directions:  Combine sugar, salt cornstarch, and boiling water.  Let it come to a boil, 

and then cook two minutes, stirring constantly.  Remove from heat.  Add butter and 

strawberry gelatin.  Stir well.   Cool slightly.  Fold in berries.  Pour into pie crust.  

Chill.  Top with whipped cream.

Comment:  May need a drop or two of red food coloring.

Apple Crisp

3 lb. apples (6-8 cups)

¾ cup sugar

¼ cup margarine

1 T. flour

1/8 tsp. baking soda

1/8 tsp. salt

1/8 tsp. baking powder

1 tsp. cinnamon

½ cup oatmeal

½ cup brown sugar

Directions:  Slice apples into small pieces.  Cut margarine into small chunks.  Mix 

together sugar, 1 T. flour, baking soda, baking powder, salt, and cinnamon.  Toss 

mixture and margarine with apple slices.  Pour apple mixture into greased baking 

For topping:  Mix together oatmeal, brown sugar, and ½ cup flour.  Spread over 

apple mixture.  Bake at 350 degrees for 40-45 minutes.
